Breakfast (and brunch) might be our favorite meal of the day. Yum! From pancakes and french toast, to bacon and eggs, and oh my goodness we could never forget about biscuits and gravy! We love it all!
This weekend, try these delicious Tater Tot cups. Kids love them, and adults too. They make a great breakfast (you’ll get those veggies in, too – score!) during the week when it’s morning mayhem, when your hosting friends for breakfast, or when you just want to mix it up and make something bite-size and delicious.
Breakfast Tater Tots
Ingredients:
- 1 bag Tater Tots, organic
- 1/2 red or yellow bell pepper, diced into small pieces
- 3/4 cup sausage, cooked and in small pieces (we used Italian sausage)
- 1 cup cheddar (or Mexican blend) cheese
- 9 eggs
- 2-3 tablespoons milk
- 1 cup spinach, cut into small pieces and stems removed
- salt, pepper, paprika and onion powder to taste
Directions:
makes approximately 20 Tater Cups
Step 1: Preheat oven to 425 degrees. In a large mixing bowl combine eggs, milk, sausage, spinach, cheese, mushrooms, pepper, salt, pepper, onion poweder and paprika. Stir to combine. If you want to substitute bacon for the sausage, or make it vegetarian, that’s works too. Just add your favorite veggies!
Step 2: Grease a muffin tin. DO NOT SKIP THIS STEP, or it will be stick and you will loathe cleaning it.
Step 3: Place 5 tater tots inside muffin tins. You can use frozen tater tots, like we did. Bake the tater tots for 10 minutes, and then remove. Use the back of a spoon, or a tart shaper into the cups of tots to create bowls. You can “shape” the bowls with your hands once a cup is pressed. Bake for another 10 minutes, and then let cool.
Step 4: Begin to pour the egg mixture into the tater cups. We used about 2 tablespoons per cup, and then topped off as needed. Cook at 350 degrees for about 20 minutes.
Serve warm and refrigerate any leftovers. Yum!
