gf cashew hummus {recipe}


My dad loves cashews. As for me, they are ok. But, Cashew Hummus. Sign me up. Seriously, it’s so good. My lovely neighbor made some for me, and I recently attempted the recipe. Easy, delish and so healthy. Not only are cashews are full copper, magnesium, zinc and manganese, but they also contain Omega 3 fatty acids and Argenine {a non-essential amino acid good for heart health}. On top of all that, lemon juice also boasts healthy essentials such as vitamin c, calcium and phosphorus, as well as anti-inflammatory properties. It’s a win-win.

This dish would be a lovely hostess gift served with crackers and fresh veggies in a basket, it will impress the pickiest of eaters {I know because my son is picky, and he loved it}, and one of the reasons I LOVED IT SO MUCH is because it’s the perfect appetizer for your vegan and gluten-free friends coming over for dinner. I love healthy people, but sometimes it’s hard to find a yummy recipe that will please everyone, and fit into everyone’s dietary needs. Unless you or a guest is allergic to cashews, this recipe is for you!

Gluten Free Cashew Hummus
recipe adapted from Sunfood Recipes
makes 3-4 cups homemade hummus {in other words, plenty to serve at a party…and to share with a neighbor}

Ingredients
3 cups raw cashews
3/4 cup tahini {my neighbor just roasted sesame seeds and used in place of actual tahini}
3/4 cups freshly squeezed lemon juice
6 garlic cloves
1.5 tsp fine Sea Salt
1.5 tsp cumin
1/4 tsp chili powder {my neighbor omitted this, and it was still delish}
1.5 tsp paprika

How To
Soak cashews for 3 hours.
Rinse and Drain the water several times.
Place cashews and all other ingredients in a food processor.
Puree until well blended.
It will probably be thick, so add water 1/4 cup at a time until you reach desired consistency.

sweet peony

We’re obsessed with peonies, so when we saw these pretty images by Becky Young Photography from her sister’s bridal shower, and peonies were in the details, we were in love.

The soft colors, ribbon backdrop, sweet peony arrangements by the one and only Cori Cook and desserts made for one lovely bridal shower. And according to Cori, the bride, Jenny, is as sweet as pie. We want to meet her…and see her August wedding!

zoo-chini bread


It’s that time of year {has been for a while} where the zucchini plant burst with zucchini growing under it large leaves. My friend gave me a zucchini as long as my right arm, and wider! So, with an upcoming trip to the zoo, the kids and I got to work baking zoo-chini bread. Get it? Clever huh?!

Two versions – Gluten Free Chocolate Zucchini Bread and Zucchini and Chia Seed Muffins. Both were delish…and made for the perfect snack as we watched the Giraffes eat leaves off the tall trees at The Denver Zoo.

Gluten Free Chocolate Zucchini Bread
recipe adapted from Joy of Baking

Ingredients
1/8 tsp xantham gum
1 cup Bobs Redmill Gluten Free All Purpose Baking Flour
1/2 cup unsweetened natural cocoa powder
3/4 tsp baking soda
1/4 teaspoon baking powder
1/4 tsp salt
3/4 cup chocolate chip morsels
2 eggs, beaten
1/2 light extra virgin olive oil
1/2 cup sugar
1/4 tsp cinnamon
1/2 cup light brown sugar
1 tsp pure vanilla extract
2 cups shredded raw zucchini

How To
Preheat oven to 350 degrees.
In a large bowl, whisk together the dry ingredients including, the flour, cocoa powder, baking powder, baking soda, salt and ground cinnamon. Then fold in the chocolate chips.
In another large bowl, use an electric blender or whisk the eggs, oil, both sugars and vanilla extract.
Fold in the grated zucchini into the wet ingredients, then fold in the ‘dry’ ingredients until well blended.
Pour batter into a greased 9x5x3 loaf pan, place in oven and bake for about 55-60 minutes {stick a toothpick and make sure it comes out clean before you remove from the oven}.
Cool, then slice and serve…or pack for the zoo.

Zucchini and Chia Seed Muffins
recipe adapted from my grandma

 Ingredients
3 eggs, beaten
1.5 cup light extra virgin olive oil
1.5 cup coconut oil
2 cups sugar
2.5 cups grated zucchini
3 cups flour
2.5 tsp cinnamon
3 tsp vanilla
1 tsp baking soda
1/2 tsp baking powder
2 tablespoons Chia Seeds

How To
Pre-heat oven to 350 degrees.
In a medium bowl, add eggs, vanilla, sugar and oil, then fold in the zucchini.
In another medium bowl, add the flour, baking soda, baking powder, chia seeds and cinnamon, then add to the bowl with the zucchini. Blend until combined.
Place in muffin cups and bake for approximately 16-18 minutes or until it pasts the toothpick test.

Safari Kids Birthday Party

Every July we celebrate many important birthdays and anniversaries in our family…3 of them being my kids birthdays. Yes, I have three children with July birthdays. It’s a challenge every year to come up with a theme applicable to all three {especially that’s budget-friendly}, but with a boy obsessed with animals and all 3 that love to dance, a DANCING SAFARI made for the perfect theme this year.

With Kraft paper, animal print accessories and fabric, duct tape, a disco ball and creativity, this year’s party was a hit. Here’s the details…

APPETIZER TABLE
Fabric {from Hobby Lobby} cut into strips and then stapled over already existing curtain rod for a backdrop.

I revamped existing lamps and lampshades into Safari Hats by adding rope and a strip of Kraft paper around the lampshade. Just simple clear packing tape was used to keep the rope and Kraft paper in place.

We served Hippo’s Favorite, Avocado Salad, a Lion’s Share of beef and chicken sliders {toothpick with duct tape pressed together and cut into the shape of a flag}, Animal Artichoke Dip, a Cheetah Cheese Plate, Elephant Broccoli Salad and African Fruit Salad.

DINING TABLE
I used a strip of cheetah print fabric for the runner, and then placed an antique piece of wood on top of it. I lined the wood with candles, giraffe bowl and figurines {from a dear friend, Sandy, who carried them with TLC all the way back from Africa} and a bark vase filled with local mountain wild grass.

Place settings inside were made from Kraft paper and on each of them, I used animal stencils to paint giraffe, zebra, lion and hippo silhouettes, and used my alphabet stamp set to add an animal fact to each one.

DANCING DETAILS
I made the dance floor using cardboard and animal print duct tape. I bought cardboard boxes for .60 cents at Wal-Mart, and cut out each square side. I placed duct tape in rows to cover the cardboard, and once all the squares were complete, I laid out each square on the floor, and used black duct tape to ‘tape’ it all together. And, no dance party would be complete without a Disco Ball. I found the Disco Ball for $15 from Party City and used a hook to hang it from our outdoor patio roof.

OTHER DETAILS
The lemonade table is an antique wine barrel {$30 from Wal-Mart}, just turned upside down. The large Mason jar drink dispenser for the lemonade is from Pottery Barn.

For more DIY details, I taped a cardboard box together to make a box, and then wrapped it with Kraft paper. I added the words, “BEWARE” and “DO NOT FEED THE ANIMALS” with black acrylic paint. And, I saved a large branch from my yard that I spray painted black to add a more ‘outdoor’ touch.

I covered the back of an antique window pane with Kraft paper and added photos of my children on the front, in each window pane opening. With bright animal print paper, I cut triangles to create a banner to add to the window pane, and a larger banner to hang from the curtain rod in the dining room.

My husband is a builder, so it often comes in handy when I need pieces of wood {conveniently and sometimes inconveniently located on my garage floor}. I used Acrylic paint to write my kids names on antique pieces of wood, and next to each name, my hubby nailed a wood number {from Hobby Lobby} for their age. This matched the look of the invite too!

Guests were greeted with a custom hand-painted wood arrow sign that read, “dancing safari” and an easel with a hand painted photo of an African scene.

FAVORS
Each Safari Adventurer  received a burlap bag with a water bottle and an African animal {hippo, giraffe, zebra, lion and rhino} and each family went home with a CD of all my kids favorite songs {think popular POP artists} to keep the dance party going at home.
